Because Geralt is no glorified super soldier, like some. In the Books and the prequel Games, there are many things that are way more powerful than him. Indeed Geralt is special since birth (Book Spoiler!), but in fact he IS "only" a Witcher. He isn´t an Elder Blood nor a Sorcerer and could be killed anytime.
